Recipe Of The Month

Simply Wellness and Executive Chef Robert Lavoie have come together to provide Roger Williams University faculty and staff with a healthy recipe of the month.   All recipes will utilize healthy alternatives in cooking and baking.  Cook using these new recipes, which are posted on the Simply Wellness website, to enjoy in the comfort of your home. During the month these recipes will be prepared by the Chefs in the Upper Commons, so be sure to visit the Simply Wellness website calendar of events for the specific day and time.

Buffalo Chicken with Blue-Cheese Dipping Sauce
Serves 6-8 people

Ingredients

  • 8 each boneless-skinless 4 oz. chicken breast  
  • 1 bottle Franks Red Hot Sauce
  • 3 cups wheat panko      
  • ½ cup flax seed
  • 1 box kashi multi-grain crackers   
  • 1 jar Smart Balance mayonnaise
  • 1 small container fat free sour cream   
  • ¼ cup white vinegar
  • ½ cup crumbled blue cheese    
  • Garlic powder
  • Salt       
  • White pepper
  • Cayenne pepper

Directions
For the chicken:
Cut the breast in half length wise and marinate in the hot sauce for about 1 hour.

For the breading
In a blender or food processor mix together the panko, crackers, and flax seeds. Season to taste with the garlic powder, salt and cayenne pepper.

For the dressing
Mix together the mayonnaise, sour cream, blue cheese and vinegar. Season with salt and white pepper and refrigerate for about an hour.

To make the chicken, remove from the hot sauce and place in the breading mixture. Place the fingers on a sprayed sheet pan and cook in pre-heated oven at 375 degrees for 15-18 minutes. Serve hot with the cool blue cheese dressing and with some cucumbers, carrots and celery sticks.
